| dc.description.abstract | La presente investigación tiene como propósito estudiar los efectos beneficiosos de la aplicación del aceite Origanum vulgare (Orégano) y la bacteriocina Weissella confusa sobre dos tipos de peces diferente al que comúnmente logramos encontrar como lo es el paiche y albacora, debido a que estas poseen propiedades para conservar las características químicas, bromatológicas y organolépticas, además se utilizó tres tipos de métodos, mojama, salazón y fresco al vacío, para cual se procedió a realizar análisis bromatológicos a cada uno de los tratamientos y luego se determinó microbiológicos al mejor tratamiento. | |
